It’s that special day of the week again!! What I Ate
My day of (actually quite lovely!) eats went as follows…
I woke up and didn’t have my usual fruit breakfast since I’m trying to cut down on ALL sugars (Candida overgrowth) … sigh… I miss my fruit! I eat fruit every other morning and another carb source on the other mornings.
This was a great alternative breakfast:
Avocado-Chocolate paste sweetened with stevia: spread on rice cakes… might sound a bit odd, but it’s good… really, really good!
After eating a few rice cakes with choco-paste & drinking a cup of coffee I went on with my day. I had the day off, so it was time to do some grocery shopping (favorite chore of the week ) Who else loves grocery shopping? Many of my friends think I’m crazy.. but I simply love to venture through the aisles looking for new things to try or to create of new recipe ideas in my head.
I think the reason I love grocery shopping so much isn’t just because of the food it involves… but also it gives me time to think of nothing else. Just simple doing the groceries. It’s something that has to be done so I can feel good about procrastinating in the shop, because ‘ey.. it has to get done So it’s a legitimate time for me to procrastinate… which is my second most fave thing to do… *oops*! Same goes for baking & cooking. We all have to eat so we all have to bake and/or cook (at least to some extent…) >> pottering around in the kitchen for hours seems like a valuable thing to do, even though there might be many more important things to get done.
Do I make any sense at all? Sorry it’s really late where I live and I need to go to bed, it shows in my writing
OK, moving on!
Speaking of baking: I’ve been baking miniature cupcakes/muffins and enjoying them as the perfect snack with my mid-morning cup of tea
I made coconut flour chocolate muffins & banana-bread muffins.
I think I prefer the decadent flavor of the chocolate one, but the banana-bread is a great pre workout snack because it offers LOT’S of simple (but healthy!) carbs, so it’s great gym fuel!
I think I need to give you the recipe so you can see for yourself what I’m rambling about
I try to eat at least one salad a day (keeps the doctor away).
Unfortunately, some days you just don’t feel like eating a salad (right?)… so today I opted for a simple side salad to go with my oven roasted pumpkin – roasted in coconut oil – & pan fried turkey strips. It made a delicious and satisfying post workout meal
After my post-workout meal I had dinner which was:
Pan fried steak tartar with pan fried onion & carrots. Half an avocado & some tomato on the side. For seasoning I kept it really simple: sea salt, black pepper and some paprika & a turmeric-cayenne mixture (on top of the carrots).
Turmeric has many health benefits, but it’s quite difficult for our body to absorb. Nature, being the brilliant mastermind it is, has a solution for this! Add a dash of cayenne pepper to your ground turmeric and the nutrients in turmeric get up to 3000 times better absorbed & utilized!
Flavor wise they complement each other very well, so I keep a small container with 3 parts turmeric to 1 part cayenne on deck at all times
Time for dessert!!! To stay in the theme with which I started my day, I ended today with a delicious raw chocolate mousse. A creamy blend of avocado, raw cacao, sweetener of choice and plenty of fresh coconut milk *recipe for coconut milk coming soon! Promise! >> This is TO DIE FOR!
That’s it for today – I’m off to bed now, it’s way past bedtime….again…
