It’s Wednesday! It’s 4.15 a.m. …. oops – I should be in bed but I’m NOT sleepy at all! I just finished working (or well, I got home like 4 hours ago) and I’m still full of energy!
Apart from tonight I did manage to get 8 hours of sleep most nights of the week. 5 out of 7 nights were on point and it feels good
literally and figuratively (sleeping more feels good, but being able to keep me to my goal feels good too!)
However… you’ll read in the footnote of this message, I’m not falling into all of my healthy habits the way I want to. I’ve actually been falling out of some healthy habits I’ve created over the months..
Ohoh… I will not get into this now, but I might get back to this some day soon if I feel it’s worthy of a blog-post.
As for now it’s time for a WIAW post!

I love yogurt as you all know
I ate this bowl of yogurt mid morning as a brunch – lunch sorta meal. Yum, yum, yum!

Oh my – I decided to experiment with a can of black beans – I LOVE making muffins more than anything so I wanted to create a muffin recipe – this was a success! I also wanted to try my new silicon heart shaped muffin tray
aren’t they cute? They kinda form a clover siting on the plate this way!

Post workout meal to replenish = broccoli – sweet potato & goats cheese – mackerel-pesto-bell pepper-tapenade ~ It might sound a little odd, but this combination is HEAVEN!

Ok, now it’s time to eat my post workout meal.. one last shot to give you a good few (I hate taking pictures after sundown – it just doesn’t do my food justice, haha)

I was a little hungry after 3 hours from my post workout meal – I promised to make my mum macaroni after she came over late at night and hadn’t eaten yet… so I decided to join her and ate a second “dinner”. This is rice macaroni with a miso, kelp, red bell pepper & sundried tomato sauce and peas. Very yummy

Late night snack right before going to bed (I always eat RIGHT before going to bed to make sure I get adequate calories to gain weight and muscle mass instead of burning my own body fat during the night – I often don’t get enough calories during my meals throughout the day, so I need an extra meal before bed. Don’t let the myth of “don’t eat after 8 p.m. hold you back – please! It’s a myth! Food = food = fuel whatever time of day you eat it) .. anyway I had one of my black bean muffins with sunflower seed butter and a large banana with cinnamon (smashed) Yummy and now off to bed because I’m stuffed and tired ![]()
It’s kind of a very boring WIAW! I know… I just didn’t have ANY inspiration to make this a more inspiring post! I will however upload the recipe to these muffins this week and I’m also gonna share a recipe for pumpkin muffins soon!
So that will be something to look forward to I hope?
OH and I will of course show you pictures from my upcoming Salsa Festival experience

Those muffins look great! I’d love to see a recipe. It was interesting to read about your pre-dinner meal – I’ve never really thought about the fact that my body might be using up muscle as I sleep. It was good to note! I usually do get hungry right before I go to sleep but I ignore it. Not any more!

Thanks girl! That plate of mac ‘n cheese pictured was my portion and it was without cheese but it tasted like cheese! Seriously, you should experiment with a miso sauce some day and it will definitely give you that mac ‘n cheese flavor – or at least as close as it gets
– my mum had some shredded cheese on top of her portion as she loves the real deal.
I definitely need to look into getting some miso. Sounds delicous.
